Frequently Asked Questions

Why should I choose Brun?
Most people have been drinking average, bitter coffee their whole lives - without even knowing what they’re missing. We’re here to change that. To show you that coffee can be complex, balanced, sweet, and full of character.
At Brun, we focus exclusively on specialty-grade coffee, the highest quality standard in the industry. We source green coffee from trusted importers and directly from farmers we’ve built personal relationships with, selecting only beans that meet our strict quality expectations. Every batch is then roasted in our own facility, using cutting-edge, specialty-dedicated equipment designed for precision and consistency.
You’re also supporting a local brand that’s working to make Moldova known on the international specialty coffee map - and you’re joining a growing community of people who care about quality, craft, and authenticity.
What is specialty coffee?
Specialty coffee refers to the highest grade of coffee available - carefully grown, harvested, processed, and roasted to bring out the best possible flavors in the cup. It starts with green coffee that has been evaluated and scored above 80 points (on a scale of 100) by certified tasters. These beans are free from major defects and are traceable back to specific farms or cooperatives that focus on quality.
The difference is huge. Commercial coffee is often lower-grade beans, roasted dark to mask flaws, and processed for volume, not flavor. Specialty coffee, on the other hand, is about precision and respect - for the product, the process, and the people behind it.
That might sound technical, but the idea is simple:
Specialty coffee is cleaner, more flavorful, and more enjoyable. It’s the difference between something bitter you tolerate, and something balanced, sweet, and surprising that you actually look forward to. Once you taste it, you won’t want to go back.
Do you do home delivery and how long does it take?
Yes, we offer home delivery, as well as delivery to a nearby pickup point via our local partner, Nova Poshta.
In the Chișinău area, orders usually arrive within 3 business days. For the rest of the country, delivery can take up to 5 business days.
Can I return the coffee? What about equipment?
We don’t accept returns on coffee or other consumables - since these are perishable products.
For equipment, we accept returns only if the item is unused, unopened and in its original packaging, and the return request is made within 10 days after purchase. Espresso machines are excluded from returns.
If you’re unsure about a product or need help choosing the right gear, reach out before you buy - we’ll be happy to guide you.
For full details, check our Shipping & Return Policy page.
Can I pick my order at your coffee shop?
Yes, if you're looking to buy coffee, just come by one of our shops - no need to order online. We usually have our full selection available in-store, and you’ll even get a free cup on the house when you grab some beans.
For larger equipment orders, place your order online first, then send us an email letting us know you'd prefer to pick it up at the shop. We’ll arrange everything for you.
Simple as that.

I want to try your coffee - where should I start?
If you’re just getting into specialty coffee, we suggest starting with flavor profiles that feel more familiar - like dark chocolate, nuts, or caramel. Coffees like A, B, or C are great entry points and offer a smooth transition from what you might be used to.
That said, don’t be afraid to explore. Fruity or floral coffees might sound unusual at first, but they open up a whole new world of flavor. Try something new each time - and even go back now and then to the darker, Italian-style roasts you used to drink. After just a couple of tries, you’ll start noticing the difference.
And once you do, there’s no turning back.
What’s the best brew method for me?
Choosing the best brew method depends on what kind of coffee experience you’re after - and how much time, gear, and attention you want to give it. If you’re unsure where to start, here’s a simple breakdown of the main methods, what they give you in the cup, and what to expect in terms of effort.
– Pour-Over Methods (V60, Chemex, AeroPress, etc.)
These are filter-style brewing methods that give you a clean, bright, and layered cup. You’ll get more clarity in flavor - think fruity, floral, or delicate notes - with a lighter body and smooth mouthfeel. These methods require some gear (a scale, kettle, filter papers) and a bit of patience, but once you get the hang of it, it becomes a super satisfying daily ritual. Great if you enjoy precision and want to explore the full complexity of coffee.
– Moka Pot
Think of it as espresso’s little sister. The Moka brews a stronger, more intense cup than filter methods, with a heavier body and bold, roasty flavors - but still a bit more diluted than actual espresso. It’s incredibly home-friendly, quick, and low-maintenance. You can make a few cups at once, so it’s perfect for families or anyone who wants a strong coffee without too much hassle.
– Espresso Machine
Rich, creamy, concentrated. Espresso has the most intense flavor and thickest body of all the methods. It also pairs perfectly with milk, so you can make everything from flat whites to cappuccinos to iced americanos. It takes a bit of practice and more equipment to get it right, but once you do, you’ll be making café-level coffee at home - or better. It’s the most versatile method if you like to mix things up.
– Cold Brew
The easiest method of them all - and ideal for hot days. Just steep ground coffee in cold water for 12–20 hours in the fridge, and it’s ready. The result is smooth, slightly sweet, and low in acidity, with a soft mouthfeel. You can drink it straight or enjoy it in some cocktails. A no-fuss method with great results.
What do I need to brew coffee at home?
What you need depends on the brewing method you’re using (or planning to use), but a few key tools are essential no matter what.
– Grinder
Probably the most important piece of equipment. A good burr grinder (ideally one that can handle both espresso and filter) makes a bigger difference than the machine itself. Grinding right before you brew preserves the coffee’s flavor, while pre-ground coffee loses most of its aromatic compounds in just 2–3 days. Plus, the burrs and grind quality affect the final taste more than you’d think.
– Scale
Precision matters. A digital scale with 0.1g accuracy helps you keep your brews consistent. Bonus if it has a built-in timer and a slim profile for easy use and storage.
Then come the method-specific tools:
– V60
You’ll need a V60 dripper, paper filters, a pour-over kettle (preferably gooseneck for control), and server, carafe or cup to brew into.
– Chemex
Chemex brewer, Chemex filters (they’re thicker than regular ones), and a kettle. Makes a smooth, clean brew - great for sharing.
– AeroPress
AeroPress kit, paper or metal filters, and a kettle. It’s super flexible, easy to clean, and travel-friendly. You can brew a wide range of styles with just this one tool.
– Moka Pot
Just the pot and a stove. Simple as that. No filters or extra gear needed - just a grinder that can get you somewhere between espresso-fine and medium-coarse.
– Espresso Machine
This setup requires a bit more: the machine, a portafilter, tamper, distribution tool or WDT, and ideally a scale that fits under the grouphead. Don’t forget proper cleaning tools - espresso demands maintenance.
What kind of water should I use for brewing?
This is a whole topic by itself, but we'll try to keep it simple here.
Avoid Tap water at all costs, - it is often very unpredictable and can make your coffee taste bad. It also can ruin your machines. Instead, use filtered water or bottled water from the supermarket with a clean, neutral taste.
We’ll go deeper into the topic soon in one of our upcoming articles. Stay tuned — and if you don’t want to miss it, subscribe to our newsletter.
I’ve got everything - how do I brew it right?
Nice - you’re all set.
To get started, head to our Brewing Suggestions section, where you’ll find clear instructions for each brewing method - including dose, water temperature, brew time, and more.
That said, don’t be afraid to experiment. Stick to the recipe at first, but then start changing one thing at a time. That’s the best way to learn how grind size, time, or water temperature affect the flavor in your cup.
Coffee is a craft - and part of the fun is figuring out how to make it just right for you.
The coffee tastes off. What’s wrong?
We knew this question could come up - so stay with us for a second.
If you've followed the brewing suggestions closely (yes, even a 5-second difference can shift the flavor), and the coffee still tastes "off," chances are it’s not bad - it’s just different from what you’re used to. Most people associate coffee with bitterness, so when they taste acidity instead, it can feel wrong or unpleasant at first.
But here’s a fact that might help:
Our brains are wired to react to different tastes in specific ways. Bitterness is often linked to toxins, so we’re naturally cautious around it. Sweetness signals nutrition. And acidity, when not too intense, is usually perceived as something fresh and healthy - like fruit.
So if you're surprised by that bright, tangy note in your cup, that’s not a flaw. It’s actually a good sign - acidity is one of the most valued qualities in specialty coffee, and it’s a key factor in how professionals rate and score beans.
Still, we understand it can take time. That’s why we offer friendlier, more balanced coffees with lower acidity to help you ease into the experience.
It’s a journey. And after just a few cups, you might find yourself not only getting used to that acidity - but actually craving it.
Can you grind the coffee for me?
Yes, we can grind your coffee for you.
When placing your order, just use the grind dropdown menu to select your brewing method - we’ll take care of the rest. For every new coffee we release, we test and create recipes across different brew methods, so you can be sure the grind is spot on.
BUT here’s the catch:
We don’t recommend pre-ground coffee unless you really have no other option.
Why? Because once coffee is ground, it starts losing its aromatic compounds fast - most of the good stuff is gone within just a couple of days. That means you're missing out on the full flavor potential.
If you want to truly enjoy specialty coffee, we strongly suggest getting your own grinder and grinding just before you brew. It makes a huge difference.
To make things easier, we’ve put together a selection of grinders that are well-built, easy to use, and don’t break the bank. You can check them out in our shop.
How should I store the coffee at home?
You can store your coffee right in the original bags it comes in. They’re designed with a zip lock and a one-way valve - the zip keeps out air and moisture, while the valve lets carbon dioxide escape without letting oxygen in. This helps slow down the aging process and keeps your coffee tasting fresh.
Just make sure to keep the bag in a dry place, away from direct sunlight, and at room temperature.
Want to take it a step further? We also stock special vacuum containers that create an airtight seal for even better preservation.
How long does the coffee stay fresh after opening?
While coffee technically has a shelf life of up to 2 years, we strongly recommend enjoying it within 3 months of the roast date to get the best flavors in your cup.
Over time, the coffee will slowly lose its aromatic compounds, and the flavor profile will change. That doesn’t mean it becomes undrinkable - just less vibrant. You might also notice that your usual recipe or grind setting might need small adjustments as the coffee ages.
So for the best experience, brew it fresh, keep it sealed, and enjoy it within that 3-month window.
What does “roast date” mean, and why should I care?
First, it helps you stay within the ideal 3-month window for best flavor. After that, coffee gradually loses its aromatics and freshness, so checking the roast date is the easiest way to know how “alive” your coffee still is.
Second, it’s about resting time. After roasting, coffee releases carbon dioxide (a process called degassing). In the first few days, this gas is released rapidly, which can affect how the coffee brews and tastes. If you brew too soon, the coffee might come out sharp, unbalanced, or overly intense.
To get the best results:
– Wait about 5 days after roasting for filter methods
– Wait around 10 days for espresso
That short wait gives the coffee time to settle — and when it does, the flavors open up beautifully.
